I was in the mood for pancakes & I decided to try this recipe posted by Theresa although I modified it a bit.
1/3 cup of rolled oats
5 egg whites
1 scoop of vanilla whey protein powder
1 banana
1 tbsp of plain greek yogurt
1 tbsp of peanut butter with roasted flaxseeds
Cinnamon to taste
I blended everything and then poured the batter on a heated pan which I sprayed some PAM on. It actually made 9 pancakes but I ate the first one to try. Gotta do a taste test. For the topping, I took an additional tablespoon of greek yogurt & I added some stevia (1/2 packet),added more cinnamon and whipped together. I also added strawberries (1/2 cup) between pancakes. The size of each pancake was roughly the size of my palm.
They came out very tasty, fluffy & very filling. If I make these again, I will try to reduce the recipe by half since it took me a while to finish them. I was so full I had to wait a while to work out. This is all one portion which came out to 10 PP+ or 488 calories.
After 5 days of not working out, I did the Turbo Jam Cardio mix. I am finally feeling better. It’s hot here in the Bay Area and I was a sweaty mess after it. I have to figure out what my target heart rate should be when working out but so far I am liking my Polar F4T. I just need to figure out how to stop it from beeping all the time.
My plan for tomorrow is to Zumba in the morning & hit the gym in the afternoon. Hopefully this will happen.
