angies—life - I seriously owe you. I can pay you back in red velvet brownies. If it wasn’t for you, I wouldn’t know about Laura in the Kitchen on YT and I wouldn’t have made this awesome orange chicken for dinner today.

SO simple and sooooo good.

Tracked all my food today. Feels good to be on the wagon.

You CAN believe what you read on the internet. Almost. Five ingredient bread recipe and it’s quite tasty. As seen on Runner’s World Facebook page. And here I thought I would be wasting a beer. 😉😋

desert-child - even though you didn’t ask, here are recipes for my dinner. I made the rice using my rice cooker. So good.

Salsa chicken - http://www.laurainthekitchen.com/recipes/salsa-chicken/

Cilantro rice - http://www.ohsweetbasil.com/2013/06/cilantro-lime-rice-cafe-rio-copycat.html

I halved the recipe and didn’t add the green chiles.

angies—life - again thank you so much for sharing Laura in the Kitchen with me. So many great recipes.

Recipe of the week: Chicken and Veggie Stir Fry.

I think my goal is to make one of Laura’s recipes once a week. I’ve yet to be disappointed and the recipes are fairly easy to follow. Leftovers for lunch will be the envy of all. Yum!

Brunch for the next few days is done. Egg Bake which I’m going to turn into an egg sandwich by adding a whole wheat sandwich thin, a slice of thin pepper jack cheese, avocado & Sriracha.

So simple & delicious. I made it 8 servings rather than 10. Due to the size of the baking dish, mine took about 30 minutes to be cooked just right. I wrapped each piece with Saran Wrap& put them in the freezer. Should last about a week. Here’s the recipe because I know you want it.

Thank you Melissa for the recipe. This was a great idea & it gets me out of my food prep funk.

Lunch tomorrow = healthy chicken nuggets.

Here’s the recipe I followed with some modifications.

http://alittlepinkinthecornfields.blogspot.com/2013/01/healthy-chicken-nugget-recipe.html?m=1

Modifications:
• 1 egg white instead of 2
• 2/3 cup of Italian seasoned breadcrumbs & 2/3 of panko breadcrumbs. I find that the mixture gives it a savory flavor & also a bit of crunch.
• I also add salt, pepper & garlic powder to the egg mix to give it more flavor.
• You can make these even healthier by only using panko bread crumbs.

The way I cut my chicken, it came out to 19 chicken nuggets & each is about 60 calories/ 2 PP+ each.

Bubbly Pancakes

Pancake Ingredients:

Buffalo Chicken Quinoa Mac & Cheese is what’s for dinner. I used @iowagirleats recipe but modified it by adding more chicken, more buffalo sauce,1 cup of cheddar cheese instead of 1.25 & added some chopped up red bell peppers. (4 to 6 portions at 8 to 12 PP+ or 314 to 471 calories)

Thank you @CoSkay for posting this recipe. It’s FREAKING AMAZING!!! I may be making it weekly because it’s that good.

Zucchini Protein Bread for breakfast. I made these last night & they are incredibly tasty. Since I didn’t have a small loaf pan I made them into muffins. 3 muffins = 1 serving.

Recipe : http://ginaaliotti.com/ginas-famous-protein-zucchini-loaf/

Around 330 calories depending on what protein powder you use. 7 PP+ if you are on WW.*

If I add the ingredients one by one I get 7PP+. If I calculate based on whole recipe, it’s 8PP+.

They came out to be 175 calories each.  Really moist & flavorful.

Preheat oven at 350. Combired desired cake mix with 1 can of pure pumpkin. Follow box instructions for baking time (mine took 20 minutes). Mix 1 pack of cream cheese (I used the fat free kind) with 3 tbsp of agave syrup. You can add more if you want the frosting to be sweeter.

Once muffins have cooled, frost & enjoy!

I got the recipe from this video
