Lunch tomorrow = healthy chicken nuggets.

Here’s the recipe I followed with some modifications.

Modifications:
• 1 egg white instead of 2
• 2/3 cup of Italian seasoned breadcrumbs & 2/3 of panko breadcrumbs. I find that the mixture gives it a savory flavor & also a bit of crunch.
• I also add salt, pepper & garlic powder to the egg mix to give it more flavor.
• You can make these even healthier by only using panko bread crumbs.

The way I cut my chicken, it came out to 19 chicken nuggets & each is about 60 calories/ 2 PP+ each.

Bubbly Pancakes

Pancake Ingredients:
4 egg whites
1/2 cup of rolled oats
1/2 cup of low fat cottage cheese
1/4 tsp of baking powder
1/4 tsp of cinnamon

Nutritional info:
8PP+ (7PP+ for the pancakes & 1PP+ for the maple syrup)
417 calories
Fat 5.4g, Carbs 32.8g, 4g fiber & 30.4g protein.

Buffalo Chicken Quinoa Mac & Cheese is what’s for dinner. I used @iowagirleats recipe but modified it by adding more chicken, more buffalo sauce,1 cup of cheddar cheese instead of 1.25 & added some chopped up red bell peppers. (4 to 6 portions at 8 to 12 PP+ or 314 to 471 calories)

Zucchini Protein Bread for breakfast. I made these last night & they are incredibly tasty. Since I didn’t have a small loaf pan I made them into muffins. 3 muffins = 1 serving.

If I add the ingredients one by one I get 7PP+. If I calculate based on whole recipe, it’s 8PP+.

They came out to be 175 calories each.  Really moist & flavorful. 

Preheat oven at 350. Combired desired cake mix with 1 can of pure pumpkin. Follow box instructions for baking time (mine took 20 minutes). Mix 1 pack of cream cheese (I used the fat free kind) with 3 tbsp of agave syrup. You can add more if you want the frosting to be sweeter.

Once muffins have cooled, frost & enjoy!

Chocolate chip oatmeal cookie pancakes.  I was impatient so they came out more like soft baked cookies than pancakes.  I used half of this recipe to make 3 cookies pancakes.  I wish they looked better cause they were amazing!  

P.S. The ingredients for these are clean with the exception of the chocolate chips.  It’s basically oatmeal, flaxseed, ripe banana, nut butter, whole wheat flour, vanilla extract, unsweetened almond milk & baking powder.  I also a bit of cinnamon because cinnamon makes everything better.

Have you all tried Trader Joe’s Green Thai Curry Simmer Sauce? That sauce is the bomb.

I made some chicken curry with bell peppers and cremini mushrooms over some brown basmati rice & it came out amazing. Will be making this dish again.

One serving of the chicken curry with 1/2 cup of the rice came out to 532 calories.

Made some ceviche for dinner & posted it on Instagram. My friend wanted the recipe so I typed it up & decided to share it with you all.

3 cups of frozen shrimp
1 sea bass filet (or tilapia)
3 medium tomatoes
6 radishes (shredded)
6 small carrots (shredded)
3 stalks of celery
1/2 cup of finely chopped cilantro
Juice of 10 lemons
3 cloves of garlic
Sal & pepper to taste
2 habanero peppers
3 jalapeño peppers
1 small purple onion

Cut the sea bass in small pieces and add to a large bowl. Add lemon juice to start the marinating process. Rinse frozen shrimp in warm water, chop into small pieces and add to bowl w/ sea bass. While sea bass & shrimp are marinating, finely chop or shred all the vegetables (except tomato & cilantro), add to the bowl and mix. You need to let it marinate overnight in the fridge.

Next day when you are ready to eat, you can add the chopped tomatoes, cilantro & season with salt & pepper. If you add the tomatoes & cilantro the night before, they will get mushy & not taste as fresh. You can adjust how many peppers you use depending on how spicy you want it. You can also add avocado but I didn’t have any.

Honey Yogurt Berry Pops with a twist.  I’ve been really into making my own popsicles lately & when I came across this recipe I was really excited at all the different possibilities.  

I used the following ingredients:

2 cups of 0% Fage greek yogurt

1/2 cup of raw honey

1 cup of fresh blueberries

2 tbsp of pine nuts

Why the pine nuts?  When I used to live in Mexico, there are a lot of establishments that solely sell “paletas” or popsicles.  So many flavors and one of my favorite was either the walnut or the pine nut flavored ones.  

I was really pleased on the flavor of these treats.  They are a healthy & clean eating dessert.
