After a few too many food splurges over the holiday, I’m working hard to get back into healthy eating. M5: Grilled salmon with veggies kabob.
Sorry for all the photo posts lately. Have much to say but can’t find the words to express myself. I have my 3 month review tomorrow so we’ll see how it goes. You all are kicking ass & taking names. So proud of you all.
Never again will I buy store bought cookies. Made these Peanut Butter Chocolate Chip cookies & they are divine. Best of all, all natural ingredients. Ingredients: Chickpeas (yes, chickpeas!), natural peanut butter, agave syrup, dark chocolate chips, vanilla extract & baking powder. 🍪
Edit: Here’s the recipe. I don’t have the actual link because it was a picture shared on FB. I used agave syrup rather than honey because I think the sweetness of the chocolate plus the honey would be too much. I also baked mine for about 16 minutes and then let them cool.
Ingredients: 1 1/4 cups canned* chickpeas, well-rinsed and patted dry with a paper towel 2 teaspoons vanilla extract 1/2 cup + 2 tablespoons (165 grams) natural peanut butter (can use PB2 from gym to make healthier, check your labels) 1/4 cup (80 grams) honey (agave would be amazing too!) 1 teaspoon baking powder** a pinch of salt if your peanut butter doesn’t have salt in it 1/2 cup (90 grams) chocolate chips
* My can was a 400 gram can, 240 grams without the water, and I used all but a few tablespoons
** If you need grain-free baking powder, you can use 1 part cream of tartar + 1 part baking soda + 2 parts arrowroot.
Directions: Preheat your oven to 350°F / 175°C.
Combine all the ingredients, except for the chocolate chips, in a food processor and process until very smooth. Make sure to scrape the sides and the top to get the little chunks of chickpeas and process again until they’re combined.
Put in the chocolate chips and stir it if you can, or pulse it once or twice. The mixture will be very thick and sticky.
With wet hands, form into 1 1/2″ balls. Place onto a piece of parchment paper. If you want them to look more like normal cookies, press down slightly on the balls. They don’t do much rising. Bake for about 10 minutes.
Yields about fourteen 1 1/2″ cookie dough balls. *** Don’t even try with regular peanut butter! They’ll come out oily. You MUST use natural peanut butter.
It may not look like much but it was amazing! M3: Stuffed Red Pepper with quinoa, ground turkey, salsa, plain Greek yogurt, low fat cheese & avocado. Oh yeah! #toneitup #tiuplan #tiumeals #eatclean #healthyeats
Never give up on something that you can’t go a day without thinking about. - Unknown
Being healthy & fit is something that I think about every day. Sometimes it consumes me & then I self sabotage. I’ve been thinking about purchasing the Tone It Up plan for quite some time and I finally decided to do it. I cancelled WW & also had so make some sacrifices. I returned my Fitbit Flex because I simple couldn’t justify buying this plan and keeping it.
I am going to spend the afternoon reading my new materials and tomorrow after the race, I will be doing my grocery shopping for the week.
My first time trying @vega_team products. FYI - starting today, Whole Foods will this brand on sale for the next month. I’m not sure if this sale is at all stores. I tried the Energizing Smoothie Bodacious Berry with unsweetened almond milk, ice & frozen mixed berries (3PP+) and it was fantastic! #vega #vegan #weightwatchers #eatclean
