Tumbling about losing weight (113 lbs so far), trying a eat clean way of life, training for my first half marathon, music and other randomness.

I wanted to share this recipe with you because:

  1. It’s delicious
  2. easy to make
  3. low in calories/points
  4. very filling
  5. did I mention it’s delicious?

Baked Grains Pilaf from Tosca Reno’s Eat Clean Diet Recharged.

Ingredients:
1 Tbsp extra virgin olive oil
1 Onion, peeled and finely chopped
1 Small Carrot, peeled and finely chopped
3 Stalks of Celery, finely chopped
1/2 Cup of finely chopped bell pepper
1/2 Cup of corn kernels
3/4 Cup millet, rinsed well (I don’t know what millet is & couldn’t find it at the store so I used orzo)
3/4 Cup Quinoa, rinsed well
3 Cups of low sodium chicken/vegetable broth
1 Tsp sea salt

I actually used 1/2 cup of orzo, 1/2 cup of quinoa & 2 cups of chicken broth because I wasn’t sure if I was going to like the dish & didn’t want to make too much of it. BIG MISTAKE.

Cooking instructions:

  1. Preheat oven to 350. Coat casserole dish with olive oil
  2. Place remaining oil in a medium skillet and heat gently. Add onion, carrot, celery, pepper and corn. Cook until onion is see through.
  3. Place washed grains in casserole dish. Add cooked veggies and mix to combine. Add Chicken/Veggie broth and salt. Cover dish with lid or tin foil. Cook for 30 min or until all the water is absorbed. (I had to cook it for about 45 minutes & perhaps that had to do with the type of casserole dish I used)
  4. Remove and serve hot with any meal.

I served it with Lemon Chicken.

Mine came out to 6 portions (1 cup) for 4 PP+/ Calories : 182
